The taxes for Sale Items can be set in Settings / Property Settings / Financial Settings / Tax Settings - Sale Tax:
If you use a tax model, for example, for Spain, then there are certain taxes that can be chosen for each sale item.
If you want to adjust the tax with a different value it is necessary to change the tax model to General. With this option, you will have the possibility to enter the tax values manually.
